You may remember last week when I shared this easy to make pumpkin pie. Well, I knew that I wanted to also make a slightly less traditional pumpkin pie, and opted for one with bourbon, along with a graham cracker/pecan crust. This bourbon pumpkin pie turned out very tasty, and once again is made using fresh pumpkin puree, along with no condensed milk.
PS, I am loving how my turkey napkin rings turned out. If you missed it, I made these Thanksgiving Napkin rings for the adults coming to Thanksgiving. But I figured the kids would kinda like some too, so I make these. Annabelle and Autumn were so excited, which made me happy.
Bourbon Pumpkin Pie
Ingredients
Crust
- 1 1/4 cup finely chopped pecans
- 1 cup grahm cracker crumbs
- 1 stick butter
- 1 teaspoon sugar
Filling
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/8 teaspoon allspice
- 1/2 teaspoon salt
- 1 tablespoon molasses
- 4 tablespoons bourbon
- 1 1/2 cups pumpkin puree
- 1 teaspoon maple flavoring
- 1 egg yolk
- 2/3 cups milk
Instructions
Crust
- Mix the pecans, graham crackers, sugar, and melted butter together and press into a pie dish. Bake for 5 minutes at 375°.
- Let crust cool before filling with the pie filling. If needed press down the crust slightly with a measuring cup.
Filling
- Preheat oven to 425°.
- Mix all the ingredients together. Pour into the crust and bake for 15 minutes at 425°. Before putting in oven wrap a thin strip of tin foil around the edge to keep the crust from burning.
- Keeping the pie in the oven lower the temperature to 375° and bake another 40-50 minutes. Until it jiggles, not wiggles.
It is made very similarly to how my other pumpkin pie was made. It was still just as easy, and just as tasty. My husband still prefers my other “traditional” pie, but I really liked this one too. There isn’t enough bourbon to give it a super strong flavor, but it’s just enough.
