Bourbon Pumpkin Pie

Ingredients
  

Crust

  • 1 1/4 cup finely chopped pecans
  • 1 cup grahm cracker crumbs
  • 1 stick butter
  • 1 teaspoon sugar

Filling

  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon allspice
  • 1/2 teaspoon salt
  • 1 tablespoon molasses
  • 4 tablespoons bourbon
  • 1 1/2 cups pumpkin puree
  • 1 teaspoon maple flavoring
  • 1 egg yolk
  • 2/3 cups milk

Instructions
 

Crust

  • Mix the pecans, graham crackers, sugar, and melted butter together and press into a pie dish. Bake for 5 minutes at 375°.
  • Let crust cool before filling with the pie filling. If needed press down the crust slightly with a measuring cup.

Filling

  • Preheat oven to 425°.
  • Mix all the ingredients together. Pour into the crust and bake for 15 minutes at 425°. Before putting in oven wrap a thin strip of tin foil around the edge to keep the crust from burning.
  • Keeping the pie in the oven lower the temperature to 375° and bake another 40-50 minutes. Until it jiggles, not wiggles.
