So you may remember last summer I threw my mom an epic surprise party for her 70th birthday. It was a blast, and one of the treats I made were homemade rice krispy treats. After making homemade marshmallows, I realized that I could use the “batter” before it sat out overnight to make some pretty tasty rice krispy treats. I had been meaning to get these on the blog since last summer, so as we’ve been stuck at home the last few months I decided to whip a batch. So here’s the recipe for super easy homemade marshmallow rice krispy treats.

Make the Marshmallows
The first thing you need to do is make the marshmallows. You will need a candy thermometer to do this since the sugar needs to be heated up to a certain temperature.
Proof Gelatin
Pour water into a mixer. Sprinkle gelatin over and allow to sit while you heat the sugar.
Heat the sugar
Combine the sugar, water, and agave syrup in a pot. Allow mixture to reach 240 degrees.
Pour over gelatin and whip (whip it good)
Once the mixture has reached 240 degrees pour it over the gelatin and turn mixture on high. Beat for about 5 minutes. Add vanilla, then beat for 5 more minutes.
Add melted butter
Add melted butter and mix for about 20 seconds.
Fold in rice krispies and sprinkles
Scoop into a pan and gently press
After you have gently pressed your rice krispy treats into a pan lined with parchment paper, let them set. After about 10-15 minutes cut and enjoy!
Full disclosure, I am usually not a fan of desserts that don’t include chocolate. I mean, in my opinion, if there is no chocolate does it even count as a dessert? But, these homemade marshmallow rice krispy treats are so tasty, that I may have to change my stance.
Now I want to start experimenting with making different types of marshmallows, and different types of rice krispies.
Homemade Marshmallow Rice Krispy Treats
Ingredients
- 1.5 tbsp gelatin
- 1/4 cup water
- 1 cup sugar
- 1/8 cup agave syrup
- 1/4 cup water
- 3/4 tsp vanilla
- 1/2 stick butter (melted)
- 1 cup sprinkles
- 5 cups rice krispies
Instructions
- Sprinkle gelatin over 1/4 cup water to proof. Do this in a mixing bowl.
- While it proofs, heat sugar, agave syrup, and water over stove. Allow to come to 240° without stirring.
- Once the sugar reaches 240° pour it over the gelatin and beat at high speed for 5 minutes. Stop and add vanilla then, beat for a few more minutes.
- Stir in melted butter.
- Fold in rice krispies and sprinkles.
- Press into a pan and wait for about 10 minutes then cut and serve.
