Remember back in the summer when I threw my mom an epic surprise 70th birthday? Well one of the treats I made for it were rice krispy treats with homemade marshmallows, and they were so tasty! Now I want to share with you how easy it is to make homemade marshmallows without corn syrup.
So are you ready to see just how easy it is to make your own marshmallows??
Step one: Prepare the gelatin
To start you need to dissolve the gelatin in water. This part is kind weird, and it doesn’t smell too great. Pour the water into a stand mixer bowl and sprinkle the gelatin over it. Now let it sit and do it’s thing for 10 minutes. While you are waiting prepare a 9X13 pan by lining it with parchment paper and spraying that paper with cooking spray. Put to the side.
Step Two: Boil the water, syrup, and sugar
Place sugar, agave syrup, and water in a pot and bring to a boil. The above picture is how it should look when you first mix everything together. Allow to boil until a candy thermometer reads 240 degrees. See picture below on how it should look now.
This is considered the “soft ball” stage of candy making. If you don’t have a candy thermometer you can determine if the syrup has cooked enough by dropping some into cold water. You should be able to form it into a soft ball in the water, but then it flattens if you take it out of the water. I strongly suggest using a candy thermometer.
Step Three: pour over gelatin
After the syrup has reached 240 slowly pour it over the gelatin while running the mixer on medium. Continue to whip everything for about five minutes.
Step Four: Add vanilla and mix more
After you have whipped the syrup for five minutes it should look like the above picture. At this point you can add your vanilla and continue to whip everything for another 5 minutes. You can also add food coloring (I added pink as I was planning on making heart marshmallows with this batch),
By the end it should look like this. The marshmallow fluff is thick and kind of sticking to the whisk. Once again mine is a light shade of pink since I added food coloring to it.
After it has been all whipped up take a greased spatula and dump it into the pan you prepared. Spread it around the best you can. You may need a second or third greased knife to help. After sprinkle a mix of powder sugar and cornstarch over the top and let set overnight.
Now cut your marshmallows into squares or use cookie cutters to cut them into shapes. And try not to eat them all in one sitting.
Homemade Marshmallows
Ingredients
- 3 tablespoons gelatin I use Knox
- 1/2 cup water
- 2 cups sugar
- 1/4 cup agave syrup
- 1/2 cup water
Cornstarch dusting
- 1/4 cup cornstarch
- 1/2 cup powder sugar
Instructions
- Pour the 1/2 cup of water into a mixing bowl and sprinkle the gelatin over it. Allow to sit for 10 minutes.
- Mix the water, sugar and agave syrup in a pot. Bring to a boil and allow to reach 240° on a candy thermometer.
- Pour syrup over gelatin and mix on medium high for 5 minutes.
- Add vanilla (and gel food coloring if you want to dye them a color) and continue to mix on high for an additional 5 minutes.
- After grease a spatula and dump marshmallow into a 9X13 pan that has been lined with parchment paper and sprayed with cooking spray. Dust the top with a few tablespoons of the cornstarch mixture and allow to sit overnight
- The next day dust all utensils with the cornstarch mixture and cut marshmallows. Then place marshmallows in a bag with a few tablespoons of the cornstarch mixture and shake to coat the marshmallows.
