I hope that everyone had a fabulous weekend. On Saturday Matt went to my SIL and BIL’s house to help them with some stuff… and he took the older girls with him!! Aubrie took a fabulous nap, and I had a few hours for me. I spent it sewing, and it was wonderful. Over the weekend we also made these super easy lemon blueberry muffins with applesauce.

Ever since making these Banana Blueberry muffins I knew that I wanted to make slightly more traditional ones. These have applesauce in them, which allowed me to reduce the amount of oil in them.
The girls always have so much fun helping me bake. On this day Aubrie brought over the little stool so she could help too. It was pretty cute.
When you make the batter it is a little bit thick. When filling the cupcake tins I recommend using a spring loaded ice cream scoop. It makes it so easy to keep everything the same. Also, you can totally use frozen blueberries in this recipe. You just need to bake them for a little while longer, or take them out to defrost a little while you prepare the batter.
I am very happy with how these muffins turned out. They are already almost gone!

Lemon Blueberry Muffins with Applesauce
Ingredients
- 2 cups flour
- 1 1/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup applesauce
- 1/4 cup vegetable oil
- 1/3 cup sugar
- 1/4 cup lightly packed brown sugar
- 1 egg
- 1 egg yolk
- 2 teaspoons valnilla
- 2 cups blueberries
- lemon zest
- 1-2 tablespoons cinnamon sugar *for topping*
Instructions
- Preheat oven to 350°.
- Mix flour, baking powder, baking soda and salt .
- In a separate bowl mix the applesauce, oil, egg, egg yolk, sugars, and vanilla.
- Mix the wet ingredients into the dry ones until just combined.
- Fold in blueberries and lemon zest. If you want to you can toss the blueberries with flour first to help keep them from sinking to the bottom of the muffins.
- Scoop batter into muffin tins and bake for 20-25 minutes or until a toothpick comes out clean.
