Lemon Blueberry Muffins with Applesauce

Servings: 15 Muffins

Ingredients
  

  • 2 cups flour
  • 1 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup applesauce
  • 1/4 cup vegetable oil
  • 1/3 cup sugar
  • 1/4 cup lightly packed brown sugar
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons valnilla
  • 2 cups blueberries
  • lemon zest
  • 1-2 tablespoons cinnamon sugar *for topping*

Method
 

  1. Preheat oven to 350°.
  2. Mix flour, baking powder, baking soda and salt .
  3. In a separate bowl mix the applesauce, oil, egg, egg yolk, sugars, and vanilla.
  4. Mix the wet ingredients into the dry ones until just combined.
  5. Fold in blueberries and lemon zest. If you want to you can toss the blueberries with flour first to help keep them from sinking to the bottom of the muffins.
  6. Scoop batter into muffin tins and bake for 20-25 minutes or until a toothpick comes out clean.
