Easy Banana Nut Muffins with Chocolate Chips

Don’t let those brown bananas go to waste. Use them to make these banana nut muffins with chocolate chips.


So I know that banana nut muffins are a dime a dozen but I made these over break and wanted to share them with you. Yes I thought that I would have had this recipe posted but I was spending time with family, then school started, then the Jeopardy GOAT started, then Aubrie was sick for a few days…. so blogging got pushed back. But I’m finally sharing them.

If your house is anything like mine, then you buy a lot of bananas. Some weeks they are gone in a few days, and some weeks no one touches them. On those weeks I love to make banana muffins. Sometimes I go for these double chocolate muffins, and other times I make these blueberry banana muffins (my third most popular post of all time). But then there are times I want simple so I make these banana nut muffins.

Banana Nut Muffins

Ingredients
  

  • 2 cups flour
  • 1 1/4 t baking powder
  • 1/2 t baking soda
  • 1/4 cup sugar
  • 1/4 t salt
  • 1 egg
  • 3 bananas
  • 1 1/2 t vanilla
  • 1/3 cup melted butter
  • 3/4 cup chopped nuts
  • 3/4 cup chocolate chips (optional)

Method
 

  1. Preheat oven to 350°.
  2. Mix flour, baking powder, and baking soda together. Set aside.
  3. Mash bananas in a stand mix (I use the paddle attachment to do this). Then stir in the sugars, egg, vanilla and melted butter.
  4. Add the dry ingredients to the wet and stir until just combined.
  5. Fold in the nuts and chocolate chips.
  6. Line a muffin tin with cup cake wrappers. Fill with batter and bake for 20-25 minutes.

Easy to make, and so tasty. I am not sure how long they would last on the counter, as I tend to keep these in the fridge so that last a little longer. They make for a great after school snack. Something sweet but not too sweet.

What’s even better is how much my girls love making them with me. As soon as they see the bananas starting to get brown they beg me to make banana muffins (although they always want to make the double chocolate ones… go figure 😉 ).
