I originally created this recipe when we were left with an abundance of ham after Easter. While we did freeze a large portion, I wanted to create a second dinner that would utilize the ham. This leftover ham breakfast does the trick.

- ham: this recipe is great for using up left over ham you may have served for a holiday. But if you don’t have any leftover ham you can buy diced ham from the store.
- potatoes: I usually make this recipe with russet potatoes, but any potato could work
- onions, shallots, bell peppers: all these veggies add a slight sweet and slightly citrusy taste to your ham and egg hash. If you don’t have any shallots you can use all onions. The bell peppers are up to you too. You could use all one color or a combination
- eggs: while I think poached eggs really taste awesome in this recipe, feel free to use fried or scrambled.
- butter and olive oil: use both to help the potatoes crisp up nicely
How to Make Skillet Ham and Egg Hash
This ham potato hash recipe is simple to make. I love how the ingredients come together to create a tasty meal that can be served for breakfast or dinner.
Dice the potatoes
First up is to dice the potatoes. The following pictures show what I find is the easiest way to dice potatoes.

Soak and dry the potatoes
After they are diced soak them in cold water for 30 minutes. This step helps the potatoes crisp up by removing some of the surface starch. I like to dice the potatoes on the smaller size. After the potatoes have soaked, drain them and rinse them. Then dump them onto a kitchen towel and pat them dry.


Dice the other veggies
While the potatoes are soaking dice up your other veggies. I apparently forgot to take a picture after I diced them, so here is the before shot.

Fry the potatoes
Melt the butter in a large skillet (I like to use this Lodge cast iron one. Yes, it’s huge, and a bit heavy, but I use it all the time). Then add the oil. Fry the potatoes with minimal flipping until they are done. If you want super crispy potatoes you may need to fry them batches so they aren’t overcrowded in the pan. I usually just fry them all at once.

Add veggies
Before starting the veggies bring a pot of water to a strong simmer for poaching eggs.
Once the potatoes are just about done add the veggies to the skillet and sauté until soft.

Add the ham
Then add the ham and cook for a little longer to warm up the ham. After turn off the burner.

Cook the eggs and combine it all
Cook the eggs however you prefer.

Variations of Ham and Potato Hash
- Try using breakfast sausage (like Jimmy Dean) instead. I would crumble and cook the sausage in the skillet, then remove it to cook the rest of the ingredients. Add it back in at the end.
- You could also try smoked sausage in place of ham.
- Use shredded hash browns instead of diced potatoes.
- Add spinach at the end of cooking.
- Top the hash with shredded cheddar cheese before serving
- Add some hot sauce. Matt does this and loves it. The girls and I are not huge spice fans, so I leave it out.

Do I have to soak the potatoes?
While you don’t have to soak the potatoes, they won’t crisp up quite as nicely. Remember soaking removes excess starch.
Which potatoes work best?
Russet or Yukon Gold are great choices as they crisp up nice. But feel free to experiment with others, even sweet potatoes!
Can I use frozen potatoes or hashbrown?
Absolutely you can. This can be a great time saver to get dinner on the table quickly. Try frozen diced potatoes or frozen shredded and see what you like more.
How To Store
Skillet ham and potato hash with eggs can be stored in an air tight container in the fridge for up to 3 days. Reheat in a skillet or the microwave.

- Dice potatoes and soak in cold water for 1/2 an hour. This helps draw out some starch and helps pantoates crisp when cooking. After the 1/2 hour is up dry potatoes then fry them in a skillet with the olive oil and butter until cooked. Add salt and pepper to taste.
- Dice the remaining vegetables, add them to skillet and sauté.
- Add the ham to the skillet.
- In a separate pot poach the eggs. Add them to the top of the ham hash.
