Skillet Ham and Egg Hash

A great way to use up left over ham, this egg and ham hash includes potatoes and veggies for a delicious dinner.

Ingredients
  

  • 5 potatoes
  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 1/2 green pepper
  • 1 red bell peper
  • 1 yellow bell pepper
  • 2 small onions
  • 2 shallots or one more onion
  • 2-3 cups cubed ham
  • 6 eggs poached

Method
 

  1. Dice potatoes and soak in cold water for 1/2 an hour. This helps draw out some starch and helps pantoates crisp when cooking. After the 1/2 hour is up dry potatoes then fry them in a skillet with the olive oil and butter until cooked. Add salt and pepper to taste.
  2. Dice the remaining vegetables, add them to skillet and sauté.
  3. Add the ham to the skillet.
  4. In a separate pot poach the eggs. Add them to the top of the ham hash.
