Method
- Dice potatoes and soak in cold water for 1/2 an hour. This helps draw out some starch and helps pantoates crisp when cooking. After the 1/2 hour is up dry potatoes then fry them in a skillet with the olive oil and butter until cooked. Add salt and pepper to taste.
- Dice the remaining vegetables, add them to skillet and sauté.
- Add the ham to the skillet.
- In a separate pot poach the eggs. Add them to the top of the ham hash.
