Does your family love tacos as much as mine? We usually have tacos at least twice a month, sometimes more. The thing is, we always end up with leftovers. Between the meat, beans and corn, there is not quite enough for a whole new dinner, but to much to toss. Enter this easy taco enchilada dinner. Using left over taco meat, you can make another delicious Mexican inspired meal.
The recipe is simple, and can probably be made with ingredients you already have on hand. The hardest part? Trying to get decent picture of the meal. It is always such a struggle to get a good picture of food that has lots of red or orange in it, even when I manually chose my white balance. At any rate, here is the recipe for taco enchilada dinner.
Taco Enchilada Dinner
Ingredients
- left over taco meat
- 1-2 cans black beans amount depends on how much taco meat you have left
- 1-2 cups corn I use leftover corn from taco night
- diced onions
Enchilada sauce
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 cup chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 2 cups water
- 2 teaspoons Better than Bullion Beef base
- corn tortillas
- 1-2 cups cheddar cheese
Instructions
- Preheat oven to 350°.
Enchilada sauce
- Start by making the enchilada sauce. You could also buy this.
- Melt butter in a pot. Add flour and cook for a few minutes.
- Add the spices and stir.
- Slowly add the water and beef base. Allow to come to a simmer and cook for about 15 minutes until sacue is slightly thickened.
Filling
- Combine the taco meat, beans, corn, and onion in a stock pot. Add 1/4-1/2 cup of enchilada sauce and heat up.
Assembly
- Pour a little of the enchilada sauce on the bottom of a 9 X 13 pan.
- Pour a little enchilada sauce on a plate, and use it to coat a corn tortilla.
- Spoon filling onto the tortilla, sprinkle with cheese , and roll up. Then place in the pan. Continue until all meat has been used up.
- Top with the remaining enchilada sauce, and then sprinkle with cheese. Cover with tin foil, and cook for about 30 minutes.
We usually get about 2-3 meals out of this dish, which I love since it means less time in the kitchen for me, and spending less money at the grocery store. Also, my parents are probably in shock this is a normal part of our meal rotation. Growing up I was quite the picky eater (I’m so sorry mom and dad), and tacos where not a favorite or mine. I’m glad that I have expanded my taste buds!
Plus you can totally customize it. If this sauce is a little too spicy for your kids cut back some of the chili powder. Don’t like beef flavor? Use a chicken or vegetable bouillon in stead of beef. Did you make chicken tacos? Use chicken in place of the beef taco meat. The possibilities are endless.
