Salted Maple Toffee Bites

Happy Monday everyone! Today officially starts our Christmas break. It will be nice to not worry about lesson planning to much these next two weeks. While I plan to do a little learning each day, I’m not going to stress out if it doesn’t happen. I am so excited to share this new cookie recipe for salted maple toffee bites with you today!


Here is the recipe, but if you want some step by step directions, you can find them after the recipe.

Salted Maple Toffee Crunch

Ingredients
  

  • 2 sticks butter
  • 1 cup sugar
  • 1 tablespoon water
  • 1 teaspoon salt
  • 2 teaspoons maple flavor
  • 3-4 sleeves graham crackers
  • 1/2 cup chopped nuts
  • 2 cups chocolate chips

Method
 

  1. Line a 9X13 pan with aluminum foil. Spray with cooking spray and then place a layer of graham crackers down.
  2. Put the butter, sugar, and water in a sauce pan and cook over medium heat until it reaches 285°. You will need a candy thermometer for this.
  3. Once it reaches 285°, remove from heat and stir in salt and maple flavor.
  4. Pour over graham crackers. After a minute sprinkle with the chocolate chips. Wait a few more minutes for the chocolate chips to start melting. Then us a knife and spread the chocolate chips around.
  5. Top with nuts. Wait for about 1-2 hours then break into bite size pieces.

**Just to note I halved this recipe, so my pan is a 9X9 inch one**

Layer the pan with graham crackers

First up is to line the pan with aluminum foil, and spray it with cooking spray. Then put a layer of graham crackers down.

Cook butter, sugar, and water

Put butter, water, and sugar in a pan and start to cook it.

Keep cooking

Keep cooking until the temperature reaches 285 degrees. When this happens remove from heat and stir in maple flavor and salt. I also added in a small amount of nuts.

Pour over graham crackers

Pour the toffee over the graham crackers, spreading with a knife if necessary.

Top with chocolate chips

Spread melted chocolate chips

Top with nuts then break into pieces

Top with nuts, then wait for the toffee to harden, and break into pieces.

This stuff is so good, and I am so glad that it turned out. We store our cookies in the garage, and I sneak a piece here and there when I go out to recycle something. I love that the girls don’t even know I’m doing it.

These salted maple toffee bites recipe will for sure become a staple in our holiday cookies. It really was very easy to do. Using a candy thermometer for the temperature makes it pretty much foolproof. If you are looking for other holiday cookie recipes, check out my peppermint mocha cookies here!
