Simple Salted Caramel S’more Brownie

Today I wanted to share with you this super simple salted caramel s’more brownie recipe. I made it to bring to my parents on the 4th of July and everyone agreed it was delicious.

Salted Caramel S'more Brownie

I didn’t take step by step photos, because it’s was pretty easy to do. I highly suggest using homemade salted caramel sauce (get my recipe here), and homemade marshmallows (once again, my corn syrup free recipe here), but store bought works just as well!

Salted Caramel S’more Brownie

Prep Time 15 minutes
Cook Time 45 minutes

Ingredients
  

Graham Cracker Crust
  • 1.5 cups graham cracker crumbs
  • 6 T melted butter
  • 1/3 cup sugar
Brownies
  • 1 Favorite brownie mix for 8X8 pan
Toppings
  • 1/4 cup salted caramel sauce
  • 2-3 cups marshmallows
  • Hershey bar
  • 2 graham crackers

Method
 

Make the crust
  1. Start by making the graham cracker crust. Combine all ingredients and press into an 8X8 pan. Bake for about 10 minutes at 350. Take out and let cool while you make your brownies.
Brownies
  1. Make your brownies according to your recipe.
  2. Spread on top of the graham cracker crust.
  3. Drizzle 2-3 tablespoons salted caramel sauce over the brownies and use a knife to swirl it around. Bake brownies according to recipe.
Toppings
  1. Once the brownies are baked take them out and top with marshmallows. Set your oven to broil, and put the brownies back in. Be sure to keep a careful eye on them, once they start to brown take them out, or the will burn.
  2. Let them cool a little, then top with broken up graham crackers, broken up chocolate bar, and a drizzle of caramel sauce.

I would share a link to the brownie recipe I use, but it’s from one of the first cook books I got, the Alpha-Bakery Cook Book by Gold Medal flour. The F is for fudge brownie recipe has been my go to for years. Did anyone else have that cook book???

As much as I love a real s’more these are actually a pretty good substitute. You for sure need to broil it to give the marshmallows that slightly crunch texture. It’s so much fun to watch them puff up then start to brown. Like I said in the directions, watch closely when you do this. It is very easy to burn them. It probably only took 2-3 minutes for my marshmallows to reach optimal toastiness.
