Smoked Sausage Au Gratin Skillet with Eckrich

Today I wanted to share a super simple meal with y’all.  Even though school has been in session for a month, some days I get home and realize that it’s 5:00 and I need to get dinner on the table stat. We love eating together as a family, but sometimes Life can get so busy. It is on those days I turn to Eckrich Smoked Sausage. I love having this easy recipe that allows us to enjoy dinner time instead of stressing about the meal.

When I make this dish I always use Eckrich Smoked Sausage, which they naturally hardwood smoke to give it a real smokehouse taste.  There is such a wide variety of Eckrich Smoked Sausage to choose from.  While I usually go with the Smoked Sausage Rope, this time I changed it up and purchased the Jalapeño & Cheddar Smoked Sausage Links while doing my shopping at Kroger.

The jalapeños  help to give the dish that little extra kick that my husband loves! Really, you can use any smoked sausage with this recipe and it will turn out great.  Eckrich has a wide variety of delicious smoked sausage in both rope and link form to choose from.

So, how to make it?  Follow along here with pictures, or scroll down to get the printable recipe. There aren’t that many ingredients, and it’s super quick!

Start by slicing your smoked sauage and browning them in a little olive oil.

After the smoked sausage has browned remove from pan. Add sliced potatoes and cook for about two minutes. Add milk, water, and a dash of salt and pepper. Bring to a boil, reduce heat, and simmer for about 15 minutes.

Then add the bag of thawed frozen vegetables, and smoked sausage to the pan. Continue to simmer for about 5 minutes.

Remove from heat and sprinkle with cheese, and enjoy!

Ingredients
  • 1 tsp olive oil
  • 14 oz Jalapeño & Cheddar Smoked Sausage Link
  • 3-4 russet potatoes
  • 1 cup milk
  • 1/2 cup water
  • 1-2 cups cheddar cheese
  • 12 oz bag of frozen vegetables, thawed

Instructions
  1. Drizzle olive oil in pan, and brown smoked sausage. Then remove from pan and keep warm.
  2. Peel potatoes, then slice about an 1/8 of an inch. Place in pan and fry for about two minute.
  3. Add water, milk, and a dash of salt and pepper and bring to a boil. Reduce heat, cover, and allow to simmer for 10-15 minutes.
  4. After 10 minutes add the bag of thawed frozen vegetables, and the smoked sausage to the pan. Cover, and continue to simmer for five minutes.
  5. Remove from heat and sprinkle with cheese.

See, wasn’t that painless?? I love that Eckrich products make it easy to get a meal on the table for my family to enjoy together. They have been around for generations and I know I can trust the brand.
