Quick and Easy Chili
How is everyone doing this Monday morning? It was a busy weekend for us, and this week is going to be super busy as well. Lots of activities going on! Today I wanted to share a quick and easy chili recipe that I like making during the week. It’s a bit different than my crock pot chili as it only takes about 30 minutes to cook on the stove. I also have a white chicken chili recipe, which is super tasty as well.

Now, onto the quick and easy chili recipe! I didn’t take step by step photos, so I’ll just jump right to the recipe!
- 1 pound ground beef
- 1 onion
- 1 bell pepper
- 1-2 jalapenos
- 1 14.5 oz can corn
- 1 14.5 oz can kidney beans
- 1 14.5 oz can beef broth
- 1 14.5 oz can diced tomatoes
- 1.5 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/4 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- Brown ground beef in pot on stove.
- Chop onion and bell pepper and add to pan and saute.
- Chop the jalapeno. You can leave the seeds or take them out depending on the amount of spice you you want.
- Put the rest of the ingredients in (drain the cans) in the pot and allow to come to a boil.
- Reduce heat and simmer 30 minutes.
- Top with cheese if desired and serve.
When I make this chili for myself and the girls I usually leave out the jalapenos since it adds just a little too much spice for our liking. Matt on the other hand is all about the spice.

Also, I’d like to note that I am glad I finally got this recipe on the blog. It’s been on my to do list for about a month, but things kept coming up. In fact I’m glad I got a recipe up, as it’s been a while. I felt last week was a bit lacking in my normal food or DIY posts, but you guys, I’ve been beat. I’ve been struggling a bit to get crafting, and don’t want to post a sub par project just to have something posted. I do have a few ideas I’d like to share, but I actually have to start them.
I just wanted you to know, not to worry. I will be posting crafts and food, but it just may not be as frequent as in the past. Plus, when the baby does arrive, it may be a bit a quiet. But I’m not planning on leaving. 😉
