Easy Chicken Alfredo with Mushrooms and Bacon
So the other week Matt had to travel for business. I am thankful that this doesn’t happen very often, and that it was only for four days. I decided to make the best of it, and make some dinners that he won’t eat. Like chicken Alfredo. He basically hates most dinners that have a base of white sauce, so I tend not to make them. I on the other hand love them, so when given the chance you know that I’m all about that.

I didn’t want just any chicken Alfredo though, so I stepped it up a bit so I added portabella mushrooms and bacon. And some super cheesy Alfredo sauce. Because I love cheese.

Making this dish was super easy, and it came together in no time.
Ingredients in Chicken Alfredo
Sauce
- butter:Â use this to help create a roux for the sauce
- cream cheese:Â this helps to add a little more flavor to the roux
- flour: the second part of the base for the sauce
- milk:Â after cooking the flour, this is added to make a cream sauce
- heavy cream: to really help thicken up the sauce and make it more rich
- garlic: add for some flavor
- parmesan cheese:Â to create a cheesy sauce
Pasta
- chicken: cook chicken to your liking
- bacon: adds flavor and crunch to the alfredo
- portabella mushrooms:Â once again, for adding flavor
- salt and pepper: season to your liking
- olive oil: for sautéing chicken and mushrooms
- noodles: pick your favorite for a thick hearty sauce. Rotini or Penne would both work great.

Since it was pretty simple to do, I didn’t take step by step photos, so here is the recipe.
- 6 tbsp butter
- 2 oz cream cheese
- 3 tbsp flour
- 3 cloves garlic
- 1 1/4 cups milk
- 1 1/4 cups Parmesan cheese
- 1/2 cup heavy cream
- 1 1/2 pounds chicken
- 6-8 slices bacon (cooked)
- 8 oz portabella mushrooms
- salt and pepper to taste
- 1 tbsp olive oil
- 1 box noodles
- Cook the box of noodles according to the directions.
- Start by cutting the chicken into thin strips. Season with salt and pepper, and cook over medium heat.
- Once cooked add the sliced mushrooms, and continue to cook until mushrooms are soft.
- Cut the bacon slices and add them to the pan,
- Start by melting the butter and cream cheese over medium heat. Then add the garlic and saute for about one minute.
- Add the flour and cook for about 1-2 minutes.
- Add the cream and milk, and allow to simmer for about 3 minutes or until thickened.
- Add the cheese, and stir until melted.
- Mix all ingredients together and enjoy.
