Peppermint Mocha Cookies

It’s no secret I love the holidays.  The decorations, the cookies, the yummy drinks.  One of my favorite drinks to treat myself to is a peppermint mocha from Starbucks.  So imagine my joy when BzzAgent sent me a coupon for a free holiday creamer by International Delight.  One of the choices, peppermint mocha.  I headed over to Kroger and picked up my creamer.

It is yummy.  I’ve been making some decaf coffee so I can enjoy it in the evenings.  
But, you know what?  This creamer can be used for more than just to make yummy coffee.  It helps make some delicious cookies!  I played around and came up with a scrumptious dough that can be used four ways.  Yep, you read that right. Four ways!

First up, the recipe (scroll down after the pictures for the written recipe):

ONE:
Cream sugars and butter together

TWO:
Add the egg and melted chocolate.

THREE:
Combine flour and baking soda in a separate bowl.  Alternate adding the flour mixture and peppermint mocha creamer to the butter mixture.

FOUR:
Now, you have two options:
First, drop by spoonful onto a cookie sheet lined with parchment paper.

Or, wrap dough in plastic wrap and chill for a few hours until firm.

FIVE:
Whatever option you choose, you will be baking the cookies at 350 degrees for 8-10 minutes.

Peppermint Mocha Cookies
Ingredients
  • 1/2 cup Butter
  • 3/4 cup Sugar
  • 1/4 cup Brown sugar
  • 1 Egg
  • 1/2 cup Peppermint Mocha Creamer
  • 2 oz Unsweetened Chocolate Melted
  • 1 2/3 cups Flour
  • 1/2 teaspoon Baking Soda
Instructions
1. Cream butter and sugars together.2. Add the egg.3. Stir in the melted chocolate.4. Mix flour and baking soda together in a separate bowl.5. Alternate adding creamer and flour mixture until everything is incorporated.6. Chill dough for a few hours to us as crinkle or blossom cookies, or use right away as a drop cookie.7. Bake at 350 degrees for 8-10 minutes.

 So what are the different cookies you can make?

If you go with the non chilling option (i.e. dropping on the parchment paper), you can make frosted peppermint mocha cookies.

To make the cookies, just drop on parchment lined cookie sheets and bake for 8-10 minutes. Once cool frost with peppermint mocha frosting and then sprinkle with crushed candy canes.

The following cookies require you to chill the dough for a few hours.  Even with chilling the dough, it will still be a bit sticky.

First off you could simply roll the dough in sugar.

Or you could make blossom cookies (you know, like the yummy peanut butter blossoms)

Simply roll the dough into balls, and roll in sugar.  Then bake for 8-10 minutes.  Once out of the oven immediately press Hershey kisses into them.  I tried some of the candy cane kisses as well, and as you can see they melted a bit more than regular kisses.

Another option is to make crinkle cookies.

With these cookies, you simply roll the dough into balls, and then roll in powder sugar.  They will crack while baking to give you a crinkled look.

See, this dough is so versatile!  I was also thinking you could wrap the dough around a Hershey kiss to make a surprise cookie.
