Quick and Easy Churro Parfait

You may remember my Mom’s 70th Birthday post where I talked about how some of my desserts met an untimely end. It was a sad day, but thankfully I had already made the recipe once before and took was able to take a few pictures of this quick and easy churro parfait, before they fell to their doom.

Quick and Easy Churro Parfait

Course: Dessert

Ingredients
  

  • 1 sheet puff pastry sheet
  • 4 oz cream cheese (softened)
  • 3.4 oz box of cheese cake pudding mix
  • 1/4 cup sugar
  • 1/2 cup powder sugar
  • 1 1/2 cups heavy whipping cream
  • 1 T cinnamon
  • cinammon and sugar mixture
  • 1/2 stick melted butter

Method
 

Filling
  1. Beat the softened cream cheese until fluffy.
  2. Add the pudding mix and continue to beat until smooth.
  3. Add in milk, sugar and cinnamon.
  4. In a separate bowl beat the powder sugar and heavy whipping cream until firm.
  5. Mix the whipped cream with the cream cheese mixture.
Churro
  1. Cut the puff pastry sheets into strips.
  2. Bake for 15 minutes at 400°.
  3. Once done, let cool then brush with melted butter.
  4. Coat with cinnamon and sugar mixture.
Putting it Together
  1. Break up some of the chuuros and place on the bottom of a parfait cup.
  2. Then top off with the cream cheese filling.
  3. Place a churro in each parfait cup.

Really, this recipe is super simple to make. And it was so tasty. I was totally disappointed that I wasn’t able to serve them.
