Spring Oatmeal and M&M Cookies

Here are the M&M cookies I made that I put on my $10 Target Challenge plate.

Do you know what I love?  A good cookie recipe.  My go- to one is is a yummy this one, a chewy chocolate chip, from Sally’s Baking Addiction.  I decided to alter it a bit, and got the recipe I am sharing with you today.

By the way, I totally fan-girled it out yesterday.  I emailed Sally to ask if it was OK to post an altered version of her recipe (giving credit to her original recipe and linking back to it) on my blog.  She responded the next day, and was so sweet.  My husband totally didn’t get it, but I know you all will. 😉  #bloggerproblems

With that said, make sure you go and check out the original recipe.  Sally gives lots of explanations on why she uses the ingredients she does.

So to start off, mix the melted butter and sugars together in one bowl.  Then add the egg and egg yolk one at a time.  After mix in the vanilla.

In a separate bowl mix the flour, baking soda and cornstarch.

Pour the dry ingredients into the wet and mix.

Stir in the oatmeal, chocolate chips and M&Ms.

Let dough chill for a few hours.

Preheat oven to 325 degrees.

After dough has chilled roll into oblong balls (I guess you could say ovals?), and place on a cookie sheet lined with parchment paper.

I totally wish I had some silicone baking mats like theseor these.  I totally meant to put them on my birthday list, but I forgot.

Any ways… bake cookies for 8-10 minutes.   Then take out of the oven, and leave them on the cookie sheet for 10 more minutes. You want them to continue cooking on the sheet after they are out of the oven.  After they have cooled on the sheet for ten minutes, remove to cooling racks.

These cookies didn’t last very long the the cooling racks.

Ingredients
  • 1 3/4 cup flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons cornstarch
  • 3/4 cup melted butter
  • 3/4 cup brown sugar lightly packed
  • 1/2 cup sugar
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • 1 1/2 cups dry oatmeal old fashion, not quick oats
  • 1/2 cup chocolate chips
  • 1/2 cup M & M
Servings: cookies
Instructions
  1. Melt butter. Stir in white sugar and brown sugar until smooth.
  2. Add egg then egg yolk. Then stir in vanilla.
  3. Mix together the flour, baking soda, and cornstarch,
  4. Pour wet ingredients into dry and mix well.
  5. Fold in M&Ms, chocolate chips, and oatmeal.
  6. Chill dough for three hours (or as long as 3 days).
  7. Preheat oven to 325 degrees. Line baking sheets with parchment paper or silicone baking mats.
  8. Roll dough into oblong balls and place on cookie sheet a few inches apart. Bake for 8-10 minutes.
  9. After 8-10 minutes, take out of oven and let sit on cookie sheet for 10 minutes longer. After this time is up, remove to a cooling rack to finish cooling.
