Corned Beef and Cabbage

When you think of St. Patrick’s Day, what do you think of?

Images that leap to my mind? Leprechauns, beer, green and white, rainbows and corned beef brisket and cabbage.

Corned beef brisket would have never made the list before I met Matt.  I had never eaten it.  His family eats it every St. Patrick’s Day, and now, so do I.  Sometimes we even make it on days other than the 17th of March, since why limit good food to just one day?

This isn’t actually that hard to make, it just takes some time.

STEP ONE:
Fist you have to pick up a corned beef brisket from the grocery store.

Yes, they are a bit pricey…

Cook it (using the seasoning packet) using the boiling method described on the package. This is the longest part of the recipe.  I believe you have to cook it for 20-30 minutes per pound of meat.

STEP TWO:
After boiling the meat  remove it (keep the water simmering though) to a broiler pan, score, and pour Vernors (ginger ale) over top.

STEP THREE:
In a separate bowl combine equal parts mustard and brown sugar.  The amount all depends on how big your brisket it.  For a 3lb brisket I would use about 1/4 cup of each.

STEP FOUR:
Slather the mustard sauce on the brisket.

STEP FIVE:
Bake at 350 Degrees for 20 minutes.

STEP SIX:
While the brisket is cooking cut 3-4 potatoes into large chunks and a head of cabbage into chunks. Add these to the leftover corned beef water. Also add 1/2-1 bag of baby carrots. Boil the vegetables for 20 minutes.

STEP SEVEN:
When everything is done, slice the brisket and serve with the vegetables.

Ingredients
  • 1 corned beef cabbage
  • 1 can vernors
  • 1/4 cup yellow mustard
  • 1/4 cup brown sugar
  • 3 potatoes
  • 1 bag baby carrots
  • 1 head cabbage

Instructions
  1. Boil corned beef with spice pack according to directions on bag.
  2. Once done, remove corned beef to a broiler pan. Score beef and pour Vernors over it.
  3. Mix yellow mustard and sugar together, then spread over the corned beef.
  4. Bake corned beef at 350 degrees for 20 minutes.
  5. While the corned beef is cooking cut your cabbage and potatoes into large chunks.
  6. Put cabbage, potatoes and carrots into the pot of water you boiled the beef in. Boil for 20 minutes.
  7. Once done, slice the beef and serve with cooked vegetables.
