Baked Cod

I’ve been trying to add more fish to our meals.  I like fish, but cooking it has always been challenging.  Not because it’s hard, but just because I don’t have many go to recipes.  I created this recipe after reading many, many different ways to cook cod.


It is super easy to do!

Step One:
Mix the olive oil, beer and crushed garlic together in a baking dish.

Step Two:
Mix flour with a dash of salt and pepper, and place in a shallow dish.

Step Three:
Crush Ritz crackers and mix with melted butter.

Step Four:
Beat an egg and pour it in a shallow dish (I used a plate).

Step Five:
Coat fish with flour.

Step Six:
Dip fish in egg.

Step Seven:
Put fish in baking dish and flip a few times.  Then top with Ritz cracker mixtrue.

Step Eight:
Bake at 400 degrees for about 20 minutes, or until fish is done.

Opps… it should read 1/4 cup flour!
