What’s Cooking Link Up

Sorry it has been so long since I’ve posted!  Between a very busy week and Annabelle not napping well I have barely had time to sit down.

So I am still working on getting people to join my link up, but I refuse to give up!

Sundaes and Spaghetti

The “rules” are easy!

With some fall weather here, I have decided to share my beef stew recipe.  Kroger had the roasts buy one get one free, so this will be on the menu soon! 
 
 
One day last year I was browning meat to use for stew.  When I looked in my cupboard for the store bought stew mix I realized I was all out.  With Annabelle screaming at me, I called my mom, but she didn’t have any either!  Luckily she came over to help with Annabelle so I could make my own stew mix.  I was nervous since my hubby really likes the McCormick mix, but he said he liked mine better!  Win!  The nice thing about making your own mix is you can control the ingredients.  Like it a little spicier?  Add some more red pepper.
 

Beef Stew Mix
*This makes enough mix for quite a few stew dinners*
2 cups flour
 4 teaspoons dried oregano
2 tablespoons dried basil
4 1/2 tablespoons salt
4  1/2 tablespoons black pepper
4 1/2  tablespoons garlic powder
4 1/2 tablespoons paprika
4 1/2 tablespoons onion powder
1 teaspoon cayenne pepper
2 tablespoons celery salt

Beef Stew
Cooking time: About 2 1/2 hours
Ingredients:
2-3 pounds stew meat
2 tablespoons flour
2 tablespoons vegetable oil
3 cups diced vegetables (I like using carrots, onions, potatoes, celery)
3-5 Tablespoons beef stew mix

Directions:
1. Heat oil in large pot.
2. Dredge meat in flour then brown in the pot with the oil.
3. 
After the meat is browned, add 2 1/2 cups water and the 3-5 tablespoons
of beef stew mix.  Bring to a boil, then let simmer covered for about 1
1/2 hours.
4.  After 1 1/2 hours add the vegetables and continue to simmer about 45 more minutes until the vegetables are tender.  
5.  Serve and enjoy!
