Method
- Drizzle olive oil in pan, and brown smoked sausage. Then remove from pan and keep warm.
- Peel potatoes, then slice about an 1/8 of an inch. Place in pan and fry for about two minute.
- Add water, milk, and a dash of salt and pepper and bring to a boil. Reduce heat, cover, and allow to simmer for 10-15 minutes.
- After 10 minutes add the bag of thawed frozen vegetables, and the smoked sausage to the pan. Cover, and continue to simmer for five minutes.
- Remove from heat and sprinkle with cheese.
