Simple Beef and Bean Soup

In an effort to use the ground beef we have I created this simple beef and bean soup.
Servings: 10
Course: Main Course, Side Dish, Soup

Ingredients

  • 1 bag 15 bean soup
  • 1.5 lbs ground beef
  • 2 large carrots
  • 3 stalks celery
  • 1 large onion
  • 3 cloves garlic
  • 10-12 cups broth (chicken, beef, or vegetable)
  • 2 14 oz cans undrained diced tomatoes (28 oz total)
  • 2 tsp salt
  • 1 tsp fresh ground black pepper
  • 1 tsp oregano
  • 1 tsp parsley
  • 1 tsp basil
  • 16 oz fresh spinach
  • 2 cups ditalini pasta (or other small pasta)

Method

  1. Either soak your beans the night before, or follow the direction for the quick soak.
  2. Brown your beef in a large stock pot, then set aside, leaving any fat in the pan.
  3. Dice up your vegetable and cook them in stock pot until slightly softened.
  4. Add your beef back to the pan, then add the cans of diced tomatoes, chicken broth, and spices. Allow to simmer for about 60 minutes.
  5. After 60 minutes add the pasta and spinach and cook for another 10 minutes.
