Lemon Blueberry Muffins with Applesauce

Servings 15 Muffins

Ingredients
  

  • 2 cups flour
  • 1 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup applesauce
  • 1/4 cup vegetable oil
  • 1/3 cup sugar
  • 1/4 cup lightly packed brown sugar
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons valnilla
  • 2 cups blueberries
  • lemon zest
  • 1-2 tablespoons cinnamon sugar *for topping*

Instructions
 

  • Preheat oven to 350°.
  • Mix flour, baking powder, baking soda and salt .
  • In a separate bowl mix the applesauce, oil, egg, egg yolk, sugars, and vanilla.
  • Mix the wet ingredients into the dry ones until just combined.
  • Fold in blueberries and lemon zest. If you want to you can toss the blueberries with flour first to help keep them from sinking to the bottom of the muffins.
  • Scoop batter into muffin tins and bake for 20-25 minutes or until a toothpick comes out clean.
