Ingredients
  • 1.5-2 pounds flat iron steak
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • 1 onion
  • 1bag tortilla chips
  • 4cups cheddar cheeseshredded
Marinade
  • 3/4cups beer (pale ale or other light beer)
  • 1/3cup garlic infused olive oil
  • 3limes juice of 3 limes
  • 2tablespoons Worcestershire sauce
  • 2-3cloves garlicdiced
  • 1 diced jalapenoseeded for a milder marinade
  • 1tablespoon brown sugar
  • 1teaspoon cumin
  • 1teaspoon onion powder
  • 1 teaspoon chili powder
Instructions
  1. Mix all the marinade ingredients together, and pour into a resealable plastic bag with the steak.
  2. Marinade the steak for 8-12 hours in the fridge.
  3. Dice the peppers and onions right before you are ready to cook the steak.
  4. Dump the marinade, and cook steak either on the stove, or on the grill. It should take about 5 minutes per side.
  5. Remove steak to a cutting board, and in the same pan saute the peppers and onion.
  6. After the pepper mixture is sauted, slice the steak into pieces.
  7. Spread a layer of chips onto a baking sheet. Then top with the pecies of steak and sauted pepper mixture. Top with four cups of shredded cheddar cheese.
  8. Bake at 350 degrees for 15-20 minutes.
