I hope that everyone had a fabulous weekend. The Spartans started their season, so it was a great weekend filled with football and food. I don’t know about you, but I love a good snack mix, particularly one that pairs well with watching football or a charcuterie board. I absolutely love candied pecans, so was inspired to make this candied cinnamon snack mix.
It is so simple to make! There was no need to take step by step directions because everything is self explanatory. Check out the recipe below.
Candied Cinnamon Snack Mix
Ingredients
- 2 cups popped popcorn
- 2 cups rice cereal
- 2 cups pretzels
- 1 cup pecans
- 2 egg whites
- 1 tablespoon cinnamon
- 3/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/2 cup white sugar
- 3/4 cup brown sugar
Instructions
- Preheat the oven to 300°F.
- Mix the sugar and spices in a small bowl.
- Combine the popcorn, rice cereal, pretzels, and nuts in a large bowl.
- Whip the eggs until frothy. I use my mixer.
- Dump the egg whites in with the popcorn mix and stir until everything is coated.
- Mix in the sugar and spices.
- Spread on a cookie sheet lined with parchment paper or a silicone mat.
- Bake for 40 minutes, stirring once or twice.
I am just so happy with how this turned out. I had tried a recipe using butter first, but the results weren’t great. I’m pretty sure my kids just told me they liked it to be nice. But when I let them try this mix, they declared it was way better than the first one I made. They were also happy I threw the first batch away…..
This candied cinnamon snack mix tastes great on it’s own, but I think it would add a little something to any sort of fall themed charcuterie board. I usually like to add candied pecans to my boards (ps. if you like candied nuts, check out this recipe for cranberry cheese bites with candied nuts), but this is just little more fun. I can also picture munching on this in front of a fire while snow falls outside (yes, I am talking about snow already. #sorrynotsorry).
