First, let me say I am a bit disappointed in the results of the Super Bowl. I was really hoping the Seahawks would win (mainly because I wanted Tom Brady to lose). I am still shaking my head at the final call. Why? Why would you make that call?!
I also thought the commercials weren’t all that great. My favorites? The Budweiser one with the dog and horses, and the one with Liam Neeson. I mean really, over all, not impressed.
Also, all Sunday and into early Monday morning it snowed, and it snowed a lot. The biggest snow storm in the area since 1974. Here are some pictures from our deck.

So, I love french onion soup. I have to try it at any restaurant I go to. If I really want some at home, what’s a girl to do? That canned stuff just doesn’t cut it when I want some good french onion soup. Luckily it is pretty easy to make! It just takes some time. So here is my french onion soup.
Here are the ingredients you need:
Four large yellow onions, half a stick of butter, 8 cups beef broth, Worcestershire sauce, and a cup of red wine (not pictured) |
Step one:
Slice onions. You will want to cut the onions in half, then slice them. On the thin side, but not super thin. That makes sense, right?
Step Two:
Melt butter in a large stock pot or dutch oven, and add your onions.
Step Two:
Now comes the long part. You have to caramelize the onions. That means you have to let them cook over low heat until they turn golden brown and oh so yummy. It took about 45 minutes to do this. Be sure stir the onions occasionally, not constantly.
Step Three:
After the onions are caramelized add the stock, Worcestershire sauce, and wine. Let simmer for about 30 minutes.
Step Four:
Pour some soup in a bowl, sprinkle with cheese (I used mozzarella), and broil until the cheese turns light brown.
**Note: you don’t have to broil, you can simply put some soup in a bowl and sprinkle with cheese. Tastes just as yummy.**
