Now that Annabelle is a year I have started getting a bit more serious about what she eats. Since I plan on starting the weaning process soon (yippee!) her nutrition is going to come from the solids she eats. She as been eating solids for about 6 months now, and sometimes she is a super star eater, other times not so much. My doctor said to try looking at what she eats over a week instead of a day by day basis, which has helped calm me down a little (I still stress about it, ask my husband, he’ll tell you).
I am always looking for new recipes for Annabelle. She likes beef but many beef recipes have tomatoes in them (I think too many tomatoes gives her a diaper rash, provably due to the acidity, which she will hopefully grow out of since most of the the dishes I make have tomatoes). I found a shepherds pie (it’s the Cheesy Beefy Shepherds Pie) from Wholesome Baby Food that looked good so I made it. Instead of making it in a 2qt. baking dish I made it in mini muffin tins (since I like to freeze her food in portion sizes). In place of russet potatoes I used sweet potatoes and used cheddar cheese on top. I am pretty happy with how they turned out, and Annabelle seemed to like it (at least yesterday she did, who knows what she will like today ;)).
To freeze them I carefully took them out of the cupcake tin (with a small rubber spatula) and put them on a plate (they did crumble a little bit) . I then stuck the plate in the freezer, and was done.
