How is everyone doing this Monday? I hope that you had a fabulous and restful weekend. One of my goals for this month is to eat healthier lunches. While my lunches usually aren’t unhealthy, I know that they could be better, and probably more filling. So one day while looking in the fridge and seeing we had left over taco stuff, this taco ranch salad was born!
I’m including a recipe card, but I’m pretty sure you don’t need one, it’s pretty simple to put together.
Taco Ranch Salad
Ingredients
- 2-3 cups romaine lettuce
- 4 oz taco meat (I use turkey)
- avocado
- onions
- 1 tomato cut up
- cheese
- ranch dressing
Instructions
- So there really isn't much to this. Mix all the ingredients together and enjoy.
So when I made this the first time I used ground beef tacos I made the night before. While it is high in protein, I know the fat content is a bit high as well. So I decided I’d make a batch of taco turkey meat for future lunches. I bought a pound of ground turkey, cooked it and added the taco seasoning, then split it into four containers. I put two in the fridge to use on salads for the week, and then froze two to have at another time.
Another goal of this salad (and part of the eating healthier lunches) is to get more veggies in my system. While I am all over fruit, vegetables usually take a back seat. Most nights I include a side of vegetables with dinner, but I know that I should be eating more, so I’ll be making an effort to include them in lunches. I also plan on making some healthier ranch dressing by mixing a packet of dry ranch with some Greek yogurt. I have done this before and it is surprisingly tasty. You may think the combination of ranch and taco is strange, but it so tasty (then again maybe it’s just a Michigan thing).
Just a little fun fact. Growing up I didn’t really like tacos or ranch dressing (or pizza, but if you’ve followed along for a while you already knew that). I was quite the picky eater (I am so sorry mom and dad). Only in the last few years have I grown an appreciation for both tacos and ranch. I still don’t like my tacos super spicy, but have majorly branched out on the different dishes I will eat.
Also, I am still without my computer and am doing all of my blogging on Matt’s. I’ve got my fingers crossed sometime this week or this weekend I’ll have mine back.
