The post doesn’t need to be new, you can link up to an older post if
you wish. As long as it has something to do with food it is good.
So, I like to plan out my meals in advance. I print up a monthly
calendar and try to fill it in at the beginning of the month. I also
have a chalkboard in the kitchen (the same one I used for documenting my
pregnancy) that I often put the weekly menu on. Despite that, I
sometimes find myself an hour away from dinner time realizing I don’t
have all the ingredients needed to make said dinner. What’s a mom to do
when that happens?
This happened to me a few weeks
ago. I had planned on having Stuffing Chicken Bake, only to realize I
didn’t have cream of chicken soup, or frozen mixed veggies. I decided
to make my own Chicken Bake with what I had on hand
1. I started by making my own cream of celery soup (since I had celery on hand). It was pretty easy to do. I followed Once a Month Recipes which gives directions on how to make any type of “cream of” soup. Sorry, I didn’t think to take any pictures of this!
2. Preheat oven to 400 degrees. Prepare a box of stuffing mix. We use Stoffer’s Stuffing. While you are letting it sit for the 5 minutes get everything else prepared.
3. While the soup was cooking I cut up some vegetables I had on hand. Originally the recipe calls for a 16 oz bag of frozen mixed veggies, but I didn’t have any. Instead I cut up some celery, carrots and onions. We also had some peas from the garden that I threw in.
If you don’t have a Vidalia Chopper, and you do a lot of chopping, I highly recommend it! It makes chopping veggies a breeze! It comes with two different sized blades, so you can make large or small dices.
This is the small blade. It cuts the veggies so easily!
4.Throw the veggies (about two cups) into a greased 9×13 baking dish. Add 1-2 lbs cubed chicken breasts (uncooked), about 2 cups of the cream of celery soup you made, 1/4 cup milk and two cups shredded cheddar cheese.
5. Put the prepared stuffing mix on top of the chicken.
Bake at 400 degrees for 30 minutes or until the chicken is cooked.
